Sow modest batches so that the crop does not all mature together. Record which variety and sowing produced usable leaves before the weather changed.
Growing in a container
Loose-leaf types are useful in containers. Leave room to reach individual plants and keep drainage clear; a small pot needs frequent moisture checks.
