- Use the maturity range on your seed packet when choosing a variety. Cold, short days and transplant stress can make harvest later than the calendar estimate.
Harvest the swollen stem while it is tender
Choose a cultivar for the size you want and keep water available for steady growth. Large-storage types and small tender varieties should not share one harvest-size rule.
Thin plants to their final spacing and cut or lift them when the stem reaches a useful tender size. Leaving an unsuitable variety to grow indefinitely can produce a woody crop.
