Nothing about a standing crop is sown to a calendar. Once planted, galangal stay in the ground for years, so the question is not when to sow but whether your winter is survivable and your planting window is open. Both answers come from your frost dates.

Getting the timing right
Plant rhizomes at the start of the warm season into rich damp soil in part shade. Harvest by cutting pieces from the edge of the clump from the second year, leaving the centre to grow on.
Frost tolerance
Damaged at about 2C, before any frost arrives. Below zone 9 it must be grown in a container that overwinters indoors.
Classified as tender, with damage expected below 2°C (35.6°F)35.6°F (2°C).
